OPPORTUNITY: An elite raw bar experience creates an additional feature, attraction of amenity for your location, like a band or a pool. It will generate significant revenue, engage & enchant an affluent, value-driven consumer, boost beverage revenues, drive additional food sales and generate significant media exposure. 

RATIONALE: Oyster consumers are VALUABLE consumers. They are driven by value, not price. They are interesting, interested, influential and affluent. Finally, they LOVE all things craft and what we do is at the vanguard of that.

HOW WE DO IT

We operate an elite oyster  & raw bar at your location. Generally we do this Wed - Sat from 4pm - 9pm for a season (Summer or Winter). Our partners do nothing or next to nothing minus obvious obligations like providing space and sometimes, cold storage. We provide the following services:

  • DESIGN & BUILD whatever needs to be built (if anything).

  • HIRE & TRAIN staff needed to operate.

  • MANAGE & OPERATE staff, ordering, receiving, storage, inventory, presentation, trash and ice.

  • MARKET & PROMOTE our operations in concert with your marketing & promotions.

BENEFITS OF RESIDENCY

  • NO SIGNIFICANT EFFORT REQUIRED We do the work. Period. We create a Win, Win, Win (You, Us, Consumers).

  • SERIOUS REVENUE It is difficult to project or model this until we can ID a specific location, operating hours and business model but the bottom line is that we will attract and retain new high-value customers to your location. They’ll buy other food & bev from you before, during and after they enjoy the raw bar service. This can generate (as it is currently in one NJ location) $9,000 - $12,000 per week in raw bar sales. Those sales can be tracked (on real checks/covers) to an additional $40,000 in F&B sales per week or $2,000,000 per year.

  • MARKETING We have significant social and digital media assets to leverage in these partnerships. Our IG following is over 10,000 and we have an additional 10,000 person email list. In your market we will create incentives for consumers to follow us for special offers, announcements and news about our raw bar offerings and drink pairings.

  • DIFFERENTIATION If your spot had the best raw bar within 500 miles it would attract people who love oysters. And that would drive sales from high-value consumers who may otherwise chose to go elsewhere for oysters. We know this is the case because we’ve done it over and over again. And we can essentially guarantee that we will get legitimate food media / critics publish stories about it.

  • NO LONG TERM DEAL NEEDED This is a seasonal offering (Summer or Winter).

  • LONG TERM DEALS POSSIBLE In the form of a licensing or franchise agreement, as per your interest.

OPTION #2 - THE SHUCK TRUCK & RAW BOAT

Usually an outdoor set up, this set up draws people to us like flies. It also becomes an additional service station for beer, wine, cocktails or cider, on tap.

SHUCK TRUCK & RAW BOAT IN ACTION @ THE BARREL @ CHARLESTON, SC - OCT / NOV 2020

As seen in the photo gallery above, we presented our RAW BOAT and our elite oyster service in front of our SHUCK TRUCK again at a dog friendly tap room / yard for about 6 weeks in the fall of 2020. Results were great considering the fact that we were not out of the woods with covid and we were operating outside with somewhat chilly temperatures for that time frame. Ultimately, there was an issue between the venue and neighborhood which resulted in The Barrel losing much of their on street parking so we had to end the program earlier than expected.

RAW BOAT is Empire Oyster’s mobile raw bar service station which was completed and ready for service in Mid October 2020. We repurposed and restored an old, wooden, 12’ wooden sailing boat and made it into the sexiest raw bar service station in the world. SHUCK TRUCK is Empire Oysters “Back Bar” for our raw bar services. It features two taps for beer, wine or batched cocktail service. It is NOT a food truck as we do not prep in it or serve oysters out of it. LEARN MORE HERE: www.EmpireOyster.com/shucktruck

When presented our service and RAW BOAT in front of our SHUCK TRUCK (which features two taps). We served oysters, clams, shrimp, crab, lobster and more. YETI 45 TANKS keep beer, wine, ciders and seltzers cold and a YETI HAUL OUT BUCKET serves to collect spent shells for oyster reef restoration projects. Soon we will be adding some additional features like lighting and a branded canopy for shade and shelter.

COSTS & NEEDS

TIME & MONEY

There may not be any costs to our partners. We may need NOT to build anything out or make any changes. We may ONLY need space to set up. In some cases we may mutually agree to make some improvements or changes to the space used. In those cases, in the past, investment has been very minimal in both time and money.

INTELLECTUAL PROPERTY

Our operations, brand and service is built around some proprietary language, tools and processes. We will license those assets for free to our partners while in an agreement where we manage and operate. We will retain ownership of this IP and require our partners to acknowledge this IP as the sole property of Empire Oyster in that process, and beyond. If we pursue a business relationship beyond a residency we can enter into a licensing or franchise agreement (details on that below in “BEYOND RESIDENCY”.

OPERATIONS

We simply need to agree to how is this business model going to be structured, revenues / costs shared, investments in the space made, what assets contributed to the venture….etc.

SPACE REQUIREMENTS

SIMPLE SET UP: Two John Boos Butcher Block tables require about 10’ x 15’ of level ground. This is a very simple and elegant set up that can work inside or outside.

THE FULL MONTY: Our Shuck Truck & Raw Boat set up requires about 20’ x 20’ of level ground. Ideally, the Shuck Truck would be in a position where it could come and go, for off-site catering opportunities. In a perfect world, we would be under some kind of covering that could protect us from rain. Lighting from above would be ideal too. We can accomplish both cover and lighting with minimal expense via a branded tent, if need be.

RISK

There is little or no financial obligation or risk in this model. As per liabilities of food service, we are fully insured and we will provide our insurance documentation and name our partners as additional insured, if need be. We’ve shucked over 1,000,000 oysters and we’ve NEVER HAD ONE SINGLE PROBLEM. We operate at the high end of the spectrum of concern over food-safety and hygiene, ALWAYS!

BUSINESS MODEL(S)

There are many models we can work with. We are flexible. To explore this in a vacuum is not productive, however. A brief discussion (built around your needs, desires, space and location) will lead us quickly to a business model we can explore and implement.

BEYOND RESIDENCY

We are always interested in full-time, year-round operations which do or do not include RAW BOAT & SHUCK TRUCK. Once we prove our model for your location and market, we can discus what a licensing or franchise deal would look like. In these models, Empire Oyster turns over operations to our partner and they operate the raw bar with our guidance, consulting and support.
