SPACE #1: RAW LAB

We are looking for a chef to take over, own and operate RAW LAB in a licensing / franchise agreement. .In a private dining room type of space, off the main courtyard we will offer the world’s only Oyster Omakase. We created this concept in 2017 and have been perfecting it ever since. Its amazing. Here guests are served a collection of MARINE CUISINE & DelicaSEAS. Master Mermmelier and Empire Oyster Founder, Kevin Joseph, will deliver the service with the help of an assistant. The position we are hiring for here is Mermmelier Protégé. The hospitality professional who excels here will ultimately, take on some of the shifts and then, possibly, the whole thing. This person DEFINITELY becomes a partner in the business and moves on one day to open our next, similar offering.


SPACE #1: EMPIRE OYSTER TEMPLE 

This is a more traditional a la carte RAW BAR which will open in October in Charleston. Here we will serve a mostly  raw / cold menu of oysters, shrimp, clams, crab, lobster, ceviche, crudo and salads that support our theme of WHOLE, LIVE, RAW & BIO-AVAILABLE. The space is essentially a showcase for raw bar classics and also modern MARINE CUISINE & DelicaSEAS. Some warm soups may be available here and we may offer a lobster roll too. Sides will consist of a large variety of pickled & fermented vegetables. Some smoked & cured foods will also be on offer. There will be a broader selection of raw bar items than probably any other raw bar, anywhere and a lot fewer items than the standard seafood restaurant offering. This is a cold station built to be a RAW BAR, not a restaurant. No hood, grill, cooking or frying will happen here. Soup warmers will be the only heat in this area. Everything we do in this are is visible to the guests as this was designed to be an “exposition kitchen”. This is a RAW BAR offering MARINE CUISINE & DelicaSEAS versus the traditional, common and tired model of “Seafood restaurant that ALSO serves ‘oysters and shrimp cocktail’”. Empire Oyster Temple IS a Temple for oysters (and much more) that will truly #RaiseTheRawBar to the kind of a culinary experience it deserves to be, in the best town for it imagable. This raw bar is not tucked in some corner of the kitchen or back behind the bar somewhere. As it should be, here the raw bar is the center of attention and action in the space. Those working in this area are not just doing a job, they are performing for an audience. Our staff will engage with guests who will gather to watch the show.

EVERYONE IN THIS FAMILY CAN BECOME A PARTNER IN THIS BUSINESS.

We want everyone to earn a percentage of ownership in the company because we want the company to be, legitimately, “Employee Owned”. WE AIM TO HAVE EVERYONE THAT STARTS WITH US AS AN EMPLOYEE TO BECOME A PARTNER ON THEIR ONE YEAR ANNIVERSARY OF THEIR FIRST DAY OF WORK WITH US! That would mean that each of the people that work for the company also own a percentage of it. Here is how we are setting up a path to that. Any employee we hire will be pledged .005% of the company’s stock if they loyally execute their duties for one year. This is ½ of 1%. It can be earned in year one and it will come from the owner & founder’s equity. We may offer another .005% after a second year. What we aim to do here is build a team that is a family of people who are doing MUCH MORE than working at a job. We are looking to create a team who start off as employees and become owners and partners. They will CARE about the business and LOVE working together. Weekly, monthly and quarterly reviews by management will be conducted to establish if the teammate is on path for partnership. Simple bottom line: Be a great teammate for a year, become a partner after a year. Partnership means you own a piece of the business, and therefore a part of the profits AND the overall value of the business. That’s real. That’s equity. And equity in this business will have value.
